Ingredients
- 6 romano peppers
- 120ml olive oil
- 2.5 tbsp finely chopped coriander
- 2.5 tbsp finely chopped flat leaf parsley
- 1 garlic clove, crushed
- 3 tbsp cider vinegar
- 100g rocket
- 200g of your chosen cheese - mozzarella or feta
- sea salt and black pepper
Instructions
- season peppers with oil and salt and pepper
- roast at 200c for 15 mins
- blitz rest except rocket and cheese
- marinade peppers in covered bowl for two hours
- put peppers on beds of rocket followed by chunks of mozzarella and dressing
