Ingredients

  • 6 romano peppers
  • 120ml olive oil
  • 2.5 tbsp finely chopped coriander
  • 2.5 tbsp finely chopped flat leaf parsley
  • 1 garlic clove, crushed
  • 3 tbsp cider vinegar
  • 100g rocket
  • 200g of your chosen cheese - mozzarella or feta
  • sea salt and black pepper

Instructions

  • season peppers with oil and salt and pepper
  • roast at 200c for 15 mins
  • blitz rest except rocket and cheese
  • marinade peppers in covered bowl for two hours
  • put peppers on beds of rocket followed by chunks of mozzarella and dressing
