Ingredients

  • 4 to 5 cups mâche
  • 3 Tbs. walnut oil
  • 2 tsp. balsamic vinegar
  • 1/2 tsp. fine sea salt
  • 1/4 tsp. freshly ground white pepper

Instructions

  • Leave the small florets of mâche intact and separate the larger ones.
  • In the bottom of a salad bowl, using a fork, gently mix together the walnut oil, vinegar, salt and white pepper. Add the mâche but do not toss. Just before serving, gently toss to coat the mâche with the vinaigrette. Serve immediately. Serves 6.
