Lunchtime Quesadilla Recipe With Smoked Turkey, Apples, Havarti Cheese & Arugula

Ingredients

  • 4 whole wheat tortillas
  • 8 tsp stone ground mustard
  • 6 oz. sliced havarti cheese
  • 6 oz. sliced smoked turkey breast
  • 1 1/2 Gala apples, cored and thinly sliced
  • 1 cup arugula

Instructions

  • Heat a medium-sized skillet over medium-high heat. Lay 1 whole wheat tortilla in the pan, and spread 2 teaspoons of the mustard over the tortilla.
  • Top with ¼ of the cheese, turkey, apple and arugula.
  • Fold over the other side of the tortilla to form a half-circle. Press down with a spatula as the cheese melts to seal the quesadilla.
  • When the bottom is golden brown, flip the quesadilla and brown on the other side.
  • Remove from the pan, cut into thirds and serve.
  • Repeat with the remaining tortillas, mustard, cheese, turkey, apple & arugula.
