Ingredients

  • 2 cooked skinless, boneless chicken breasts, diced
  • 10 dried apricots, cut into small pieces
  • 1 stalk celery, diced
  • 1 green onion, thinly sliced
  • 1/4 cup + 2 tbsp plain, nonfat Greek yogurt
  • 1 1/4 tsp curry powder
  • 1/4 - 1/2 tsp salt, to taste*
  • Pepper, to taste
  • 1/4 tsp ground pepper
  • Makes 3 cups

Instructions

  • In a medium-sized bowl, mix together the chicken, dried apricots, celery, green onion, Greek yogurt, curry powder and salt. Adjust the seasoning, to taste.
