Ingredients

  • Cake Mix
  • 150g Butter
  • 150g Caster Sugar
  • 3 Eggs
  • 150g Self-Raising Flour
  • 1 Table Spoon Milk
  • 3 Table Spoons Lemon Essence
  • Lemon Drizzle Icing
  • 200-250g Extra Fine Caster Sugar
  • Juice of 1-1 1/2 Lemons
  • Decorating
  • Thiny Cut Lemon Rind

Instructions

  • Cream Softened Butter and Sugar
  • Add Flour, Eggs, Milk and Lemon Essence, Mix untill all the ingredients are combined
  • Spoon into 18 Cake Cases
  • Cook in a Preheated oven at 180C for 20-25 min depending on your oven
  • Take out of oven and place on a cooling rack before decorating with Lemon drizzle Icing and Lemon Rind
