Ingredients
- 150g arborrio rice
- 1 small onion diced
- 1 garlic clove chopped small
- 150g streaky smoked bacon cut into small pieces
- 50g mushrooms sliced
- 50g frozen peas
- 1 beef stock cube
- 500ml water
- seasoning
- 1 tbsp olive oil
Instructions
- heat olive oil in a large pan and add chopped onion and cook until soft (7-8 mins)
- add chopped bacon to the pan and cook for 5 mins
- add mushrooms to the pan and cook for 5 mins
- crumble in the beef oxo cube and season to taste
- stir in rice
- pour in the water stir everything in well then allow to boil
- once boiled turn heat low and allow to simmer for 20mins stirring occasionally
- after 20mins add frozen peas and cook for a further 10mins or until all the liquid has evaporated
- spoon mixture into bowls and serve
