Ingredients
- 1 large bag crisp mixed salad , about 200g
- 2 large carrots , peeled and finely diced
- 1 small red onion , diced
- 2 red peppers , cut into rings
- 1 tbsp grated Parmesan (or vegetarian alternative)
- 1 tsp sugar
- 2 tbsp lemon juice
- extra-virgin olive oil
Instructions
- Whisk the olive oil, vinegar and sugar, then stir in the chopped olives and onion. Season. Tip the leaves into a bowl. Drizzle the olive dressing over and toss gently to coat.
