Ingredients

  • 1 large bag crisp mixed salad , about 200g
  • 2 large carrots , peeled and finely diced
  • 1 small red onion , diced
  • 2 red peppers , cut into rings
  • 1 tbsp grated Parmesan (or vegetarian alternative)
  • 1 tsp sugar
  • 2 tbsp lemon juice
  • extra-virgin olive oil

Instructions

  • Whisk the olive oil, vinegar and sugar, then stir in the chopped olives and onion. Season. Tip the leaves into a bowl. Drizzle the olive dressing over and toss gently to coat.
