Ingredients
- 5 garlic
- large bunch fresh basil
- 4 tbsp extra virgin olive oil
- 2 tbsp tomato purée
- 4 x 400g/14oz cans chopped plum tomatoes
- 1 tbsp caster sugar
- salt and freshly ground black pepper
- 2 herby pork sausages
- 1 tsp olive oil
- ¼ tsp dried crushed chillies
- , cooked according to packet instructions spaghetti
- freshly grated parmesan
- 1 tbsp mascarpone

- leaves, to serve basil
Instructions
- Heat the oil in a frying pan and fry the onion over a low heat for 5 minutes, stirring regularly with a wooden spoon. Add the garlic and cook for a few seconds more.
- Add the tomatoes, herbs and sugar and cook for 5 minutes, stirring regularly.
- Stir in a splash of water to loosen the sauce, if needed, and season to taste.
