Ingredients

  • 5 garlic
  • large bunch fresh basil
  • 4 tbsp extra virgin olive oil
  • 2 tbsp tomato purée
  • 4 x 400g/14oz cans chopped plum tomatoes
  • 1 tbsp caster sugar
  • salt and freshly ground black pepper
  • 2 herby pork sausages
  • 1 tsp olive oil
  • ¼ tsp dried crushed chillies
  • , cooked according to packet instructions spaghetti
  • freshly grated parmesan
  • 1 tbsp mascarpone

  • leaves, to serve basil

Instructions

  • Heat the oil in a frying pan and fry the onion over a low heat for 5 minutes, stirring regularly with a wooden spoon. Add the garlic and cook for a few seconds more.
  • Add the tomatoes, herbs and sugar and cook for 5 minutes, stirring regularly.
  • Stir in a splash of water to loosen the sauce, if needed, and season to taste.
