This recipe combines the creamy goodness of goat cheese atop a crispy rye bread base, baked to fragrant perfection. Ingredients

  • 2x 150 g goat cheese slices
  • 2 slices of rye bread
  • Oregano
  • Provence herb mix
  • 1 Lettuce
  • 250 g of smoked bacon lardons
  • Olive oil
  • Mustard
  • Red wine vinegar

Instructions

  • Brush the bread with olive oil to cover the whole slice and place in an oven proof dish. Put the goat cheese on top and sprinkle lots of herb, grind black pepper and add in a little fresh oregano if you have any. Drizzle with olive oil and place in the oven for 10 minutes at 200oC or until nicely brown with the middle of the goat cheese melting. Place it on a plate and serve with a side green salad and fried lardons dressed in vinaigrette.
