Ingredients

  • 250g Pork Escalopes or Steaks (depending on the waist line)
  • Low fat Cooking Spray or Olive Oil (depending on the waist line)
  • 1 red onion sliced into rings
  • 3 slices of fresh ginger (about the size of a pound coin)
  • 1 Garlic Clove
  • 150ml Chicken Stock
  • 1 Tsp of tabasco Sauce
  • 2 tsp wholegrain mustard
  • 1 tbsp of maple syrup
  • salt and freshly ground black pepper

Instructions

  • Cut the escalopes into 6-8 pieces (if using), heat a non stick pan to a high heat and brown the meat remove and keep warm
  • Reduce heat of pan and add oil cook the onion, ginger and garlic for 3-5 mins until soft and just brown
  • Add stock, Tabasco sauce and mustard and simmer. Return the pork to pan and simmer till cooked through (about 5-10 mins)
  • Remove Slices of ginger and stir in maple syrup season to taste
