Ginger And Mustard Pork

Ingredients
- 250g Pork Escalopes or Steaks (depending on the waist line)
- Low fat Cooking Spray or Olive Oil (depending on the waist line)
- 1 red onion sliced into rings
- 3 slices of fresh ginger (about the size of a pound coin)
- 1 Garlic Clove
- 150ml Chicken Stock
- 1 Tsp of tabasco Sauce
- 2 tsp wholegrain mustard
- 1 tbsp of maple syrup
- salt and freshly ground black pepper
Instructions
- Cut the escalopes into 6-8 pieces (if using), heat a non stick pan to a high heat and brown the meat remove and keep warm
- Reduce heat of pan and add oil cook the onion, ginger and garlic for 3-5 mins until soft and just brown
- Add stock, Tabasco sauce and mustard and simmer. Return the pork to pan and simmer till cooked through (about 5-10 mins)
- Remove Slices of ginger and stir in maple syrup season to taste
