Ingredients

  • 680g cooking apples
  • 1/4 pint water
  • juice 1 lemon
  • 340g sugar
  • 2 eggs
  • 113g butter
  • pinch of ground ginger

Instructions

  • cut apples and simmer in water & lemon juice until pulpy
  • sieve
  • add sugar eggs and butter
  • cook gently until thickened -do not boil- add ginger then pot & cover
