This easy frittata recipe is a delicious way to use up leftover new potatoes and frozen peas. With a creamy feta topping, this dish is a perfect combination of flavors and textures. Just a few simple steps and you'll have a hearty meal ready to enjoy!

Ingredients

  • handful of frozen peas
  • leftover new potatoes
  • 100g of feta, crumbled
  • 5 eggs
  • tablespoon of Olive Oil

Instructions

  • Preheat oven to 200C. Boil the new potatoes for ten minutes until tender, allow to cool, then slice
  • Beat the eggs as though you were to be making an omlette
  • Heat the oil in an oven proof frying pan then add the sliced potatoes. Mix the peas and feta together then pour over the sliced potatoes.
  • Heat until the base is cooked, then pop in the oven for 20-25 mins or until a knife comes out clean when inserted.
  • Serve and enjoy.
