Fried Okra

Ingredients
- 1 tbsp groundnut oil
- 5 cloves of garlic peeled and chopped
- 1/2 chopped medium onion
- approx 20 okra split in half
- 2 tbsp chicken stock
- 1 green chilli deseeded and chopped
- 1/2 tsp ground coriander
- 4 tomatoes deseeded & cut into slivers
Instructions
- Heat oil over high heat & add garlic, fry until golden then set aside
- |Melt butter, cook onions until slightly golden then add okra
- Fry at a medium heat then add the garlic together with the stock, chilli, coriander & tomatoes
- When the mixture is sizzling, transfer to a plate and serve
