Fried Chicken & Egg Fried Rice

Ingredients
- 100g-150g of chicken (legs or thighs)
- 100-150g of plain flour
- teaspoon of salt & pepper
- teaspoon of all spice seasoning
- 6 eggs
- 160g rice= 1/2 cups
- 15g of prawns
- 1 spring onion( finely chopped)
- about 1-1/2 cups vegetable oil
- tablespoon sesame oil
- 1/2 tablespoon butter
Instructions
- first get your rice and put it into a bowl with cold water to take out the starch then drain out the water then add fresh water then add butter. boil for 15-20 minutes
- preheat the oven at 190c/fan 375/gas mask 5
- get a frying pan and pour in the oil and heat it for about a minute
- crack 2 eggs in a bowl. wash your chicken and if it has hair on it pluck it with a kitchen knife then roll your chicken in the bowl of egg.
- after , get another bowl and mix in flour , all spice seasoning and salt & pepper . then roll the chicken in the mixture and place the chicken in the frying pan until light brown then flip the other side so it all be cooked
- after that, cook the chicken in the oven for 50-60 minutes until golden brown
- when the rice is cooked put it on the side to cool down for a minute or so
- with the remaining eggs crack them in a bowl and add tablespoon of sesame oil and mix well then turn it into scramble egg
- chop the spring onion and mix with the prawns . next combine the to with the scramble egg and rice and sprinkle with light soy sauce and mix well
- when chicken is cooked put it on a plate with your rice and enjoy your fried chicken and fried rice
