Ingredients

  • 1 flatbread, naan or pitta
  • Handful of baby spinach leaves
  • Half a red pepper
  • Half a red onion
  • Handful of baby plum tomatoes
  • A few asparagus spears
  • 100-125gg buffalo mozzarella
  • 1 tbsps olive oil
  • Salt and black pepper

Instructions

  • Place the spinach on the flatbread
  • Add the chopped peppers, onion and tomatoes
  • Lay the asparagus spears across the top
  • Drizzle with olive oil and add seasoning
  • Bake at 180C/fan 160C normal
  • Tear over the cold mozzarella to serve
