Ingredients

  • 3 small heads Little Gem Lettuce, torn into pieces
  • 1 head Radicchio, torn into pieces
  • 1 large handful wild Arugula
  • 1 Pomegranate, seeded
  • 2 Persimmons, thinly sliced
  • 2 Pink Lady Apples, sliced
  • ½ cup Brown Sugar Candied Walnuts
  • 1 (11-ounce) log plain goat cheese
  • 2 large eggs, beaten with 1 tablespoon water
  • Fresh bread crumbs
  • Vegetable oil
  • 1 garlic clove, finely minced
  • 1/2 shallot, finely minced
  • 1 tablespoon Dijon mustard
  • 1/4 cup olive oil
  • 1/8 cup balsamic vinegar
  • Kosher salt and freshly cracked black pepper to taste

Instructions

  • To make the vinaigrette, in a small bowl, whisk together the vinegar, garlic, salt and pepper. Add the olive oil in a thin stream, whisking constantly until well blended.
  • Put the greens in a large serving bowl, drizzle with the vinaigrette and toss to coat evenly. Top with the persimmons, pomegranate seeds, nuts and goat cheese, and toss well. Serve immediately.
