Fall Farmers Market Salad

Ingredients
- 3 small heads Little Gem Lettuce, torn into pieces
- 1 head Radicchio, torn into pieces
- 1 large handful wild Arugula
- 1 Pomegranate, seeded
- 2 Persimmons, thinly sliced
- 2 Pink Lady Apples, sliced
- ½ cup Brown Sugar Candied Walnuts
- 1 (11-ounce) log plain goat cheese
- 2 large eggs, beaten with 1 tablespoon water
- Fresh bread crumbs
- Vegetable oil
- 1 garlic clove, finely minced
- 1/2 shallot, finely minced
- 1 tablespoon Dijon mustard
- 1/4 cup olive oil
- 1/8 cup balsamic vinegar
- Kosher salt and freshly cracked black pepper to taste
Instructions
- To make the vinaigrette, in a small bowl, whisk together the vinegar, garlic, salt and pepper. Add the olive oil in a thin stream, whisking constantly until well blended.
- Put the greens in a large serving bowl, drizzle with the vinaigrette and toss to coat evenly. Top with the persimmons, pomegranate seeds, nuts and goat cheese, and toss well. Serve immediately.
