Easy Chocolate Mousse Crunch

Ingredients
- Chocolate Mousse
- 75g Dark Chocolate (Can use Milk Chocolate if you prefer)
- 2 Eggs Seperated
- 25g Melted Butter
- 2tbsp Caster Sugar
- For that added kick you can add 1tbsp of Baileys, Tia Maria or Peppermint. All work well
- Crunch
- 1/2 Packet of Chocolate Digestives
- 25g Melted Butter
Instructions
- Melt chocolate and butter together and allow to cool. Stir in the egg yolks.
- Whisk the egg whites and then add 2tbsp of caster sugar. Whisk again until stiff.
- Fold in the chocolate mix to the egg whites until smooth and creamy.
- Now for the crunch: Add chocolate digestive biscuits and melted butter to food processor and mix until you have breadcrumb consistency.
- Take 4 ramekins and add a layer for crunch mix to base (about an inch high). Then top with chocolate mousse mix. Put in fridge to chill.
