Ingredients

  • Chocolate Mousse
  • 75g Dark Chocolate (Can use Milk Chocolate if you prefer)
  • 2 Eggs Seperated
  • 25g Melted Butter
  • 2tbsp Caster Sugar
  • For that added kick you can add 1tbsp of Baileys, Tia Maria or Peppermint. All work well
  • Crunch
  • 1/2 Packet of Chocolate Digestives
  • 25g Melted Butter

Instructions

  • Melt chocolate and butter together and allow to cool. Stir in the egg yolks.
  • Whisk the egg whites and then add 2tbsp of caster sugar. Whisk again until stiff.
  • Fold in the chocolate mix to the egg whites until smooth and creamy.
  • Now for the crunch: Add chocolate digestive biscuits and melted butter to food processor and mix until you have breadcrumb consistency.
  • Take 4 ramekins and add a layer for crunch mix to base (about an inch high). Then top with chocolate mousse mix. Put in fridge to chill.
