Ingredients

  • BASE
  • 200g digestive biscuits
  • 100g butter or marge
  • 2/3 tablespoons soft brown sugar
  • TOPPING
  • 3 packs elmlea dream topping (make acc. to pack instructions by whisking with 450ml milk)
  • 200g philadelphia cream cheese
  • 150g icing sugar
  • Fruit (strawberries, kiwi, canned cherries are good)

Instructions

  • Crush the biscuits with a rolling pin, mix in the sugar.
  • Crush the biscuits with a rolling pin, mix in the sugar.
  • Press the base into suitable base – I normally just put the outside of a cake tin straight on a plate.
  • Make the dream topping by whisking it up with milk as per packet.
  • Sieve icing sugar and whip with cream cheese. Whisk with dream topping mixture. It should be fairly thick.
  • Pour topping onto base, chill for a few hours/overnight then arrange fruit on top and serve.
