Ingredients
- BASE
- 200g digestive biscuits
- 100g butter or marge
- 2/3 tablespoons soft brown sugar
- TOPPING
- 3 packs elmlea dream topping (make acc. to pack instructions by whisking with 450ml milk)
- 200g philadelphia cream cheese
- 150g icing sugar
- Fruit (strawberries, kiwi, canned cherries are good)
Instructions
- Crush the biscuits with a rolling pin, mix in the sugar.
- Crush the biscuits with a rolling pin, mix in the sugar.
- Press the base into suitable base â I normally just put the outside of a cake tin straight on a plate.
- Make the dream topping by whisking it up with milk as per packet.
- Sieve icing sugar and whip with cream cheese. Whisk with dream topping mixture. It should be fairly thick.
- Pour topping onto base, chill for a few hours/overnight then arrange fruit on top and serve.
