Ingredients

  • 2 old-fashioned oats
  • 1/2 raw cashews, very coarsely chopped
  • 1/2 raw pecans, very coarsely chopped
  • 1/2 raw shelled pumpkin seeds (pepitas)
  • 1/2 unsweetened flaked organic coconut
  • 1/2 vegetable oil
  • 1/2 pure maple syrup
  • 1/3 buckwheat groats
  • 1/3 honey
  • 1/3 raw almonds, very coarsely chopped
  • 1/3 raw sunflower seeds
  • 1/4 flaxseeds
  • 1/4 raw sesame seeds
  • 1 pure vanilla extract
  • 1/2 kosher salt

Instructions

  • Preheat oven to 300°. Toss oats, cashews, pecans, pumpkin seeds, coconut, oil, maple syrup, groats, honey, almonds, sunflower seeds, flaxseeds, sesame seeds, vanilla extract, and salt in a large bowl. Spread out on a parchment-lined baking sheet and bake, stirring occasionally, until golden brown, 50–60 minutes. Let granola cool on pan, then break into clusters.
  • DO AHEAD: Granola can be made 2 weeks ahead. Store airtight at room temperature.
