Dublin Chilli

Ingredients
- 120ml olive oil
- 1kg minced beef
- 1tsp salt
- Half tsp ground pepper
- 2 large cloves garlic
- 1 large onion
- 1 red pepper (long ones there more fresh) diced no seeds etc
- 1 carrot peeled and diced
- Tsp ground cumin
- Tsp ground coriander
- Tsp chilli powder
- Can of tomatoes with juice
- 2 cans of red baked beans
- 2 pints of Guinness
- 1 pint vegetable stocks
Instructions
- Heat half of the olive oil over medium-high heat in large saucepan. Add the beef, salt and pepper then cook stirring until browned and the juices have evaporated about 15mins.
- Heat the remaining olive oil over medium heat in another saucepan. Add garlic, onion, pepper, carrot, cumin, coriander and chilli powder. Cook the mixture, stirring here and there.
- Add the beef to the mixture of vegetables. Pour half a cup off water into the pan bring to a boil
- Add the tomatoes then Guinness and stock and tomato puree and beans along with and pepper and cook.
- Enjoy and serve with brown rice :)
