Ingredients

  • 120ml olive oil
  • 1kg minced beef
  • 1tsp salt
  • Half tsp ground pepper
  • 2 large cloves garlic
  • 1 large onion
  • 1 red pepper (long ones there more fresh) diced no seeds etc
  • 1 carrot peeled and diced
  • Tsp ground cumin
  • Tsp ground coriander
  • Tsp chilli powder
  • Can of tomatoes with juice
  • 2 cans of red baked beans
  • 2 pints of Guinness
  • 1 pint vegetable stocks

Instructions

  • Heat half of the olive oil over medium-high heat in large saucepan. Add the beef, salt and pepper then cook stirring until browned and the juices have evaporated about 15mins.
  • Heat the remaining olive oil over medium heat in another saucepan. Add garlic, onion, pepper, carrot, cumin, coriander and chilli powder. Cook the mixture, stirring here and there.
  • Add the beef to the mixture of vegetables. Pour half a cup off water into the pan bring to a boil
  • Add the tomatoes then Guinness and stock and tomato puree and beans along with and pepper and cook.
  • Enjoy and serve with brown rice :)
