Dons Sausage Casserole

Ingredients
- 8 Pork sausages
- 2 medium red onions, chopped
- Stick of celery, chopped
- 1yellow pepper, sliced
- 1 red pepper, sliced
- 2 small apples
- 300 mm vegetable stock
- 400 mm cider or white wine
- 2 medium tomatoes, chopped
- Tbsp Worcester sauce
- Par boiled potatoes, if desired.
- 2 Tbsp virgin oil
Instructions
- Fry the onions, peppers and celery in 1tbsp oil until soft
- Add the sausages and remainder of oil and fry until browned.
- Add all ingredients into a casserole dish, except the apple and tomatoes and potatoes and oven bake for 45 minutes
- Add tomatoes, sliced apple and if desired par boiled potatoes and bake or a further 30 minutes
