Ingredients

  • 3 pounds boneless semi cooked chicken thighs
  • 1 cup of chopped celery
  • 1 can sliced water chestnuts
  • 2 tbsp finely minced onion
  • 1 can cream of chicken soup
  • 1 cup reduced fat mayonnaise
  • 9 ounces sour cream
  • 2 tbsp lemon juice
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • Crushed potato crisps
  • 1/2 tsp paprika
  • Minuture tomatoes to taste

Instructions

  • Cut chicken into bite size pieces
  • Mix chicken with remaining ingredients, except potato crisps and paprika
  • Pour mixture into greased casserole dish and top with potato crisps and a sprinkle of paprika
  • Bake, uncovered, at 350 degrees for 30-40 minutes or 160 for fan oven.
