Don's Chicken Casserole

Ingredients
- 3 pounds boneless semi cooked chicken thighs
- 1 cup of chopped celery
- 1 can sliced water chestnuts
- 2 tbsp finely minced onion
- 1 can cream of chicken soup
- 1 cup reduced fat mayonnaise
- 9 ounces sour cream
- 2 tbsp lemon juice
- 1/4 tsp salt
- 1/8 tsp pepper
- Crushed potato crisps
- 1/2 tsp paprika
- Minuture tomatoes to taste
Instructions
- Cut chicken into bite size pieces
- Mix chicken with remaining ingredients, except potato crisps and paprika
- Pour mixture into greased casserole dish and top with potato crisps and a sprinkle of paprika
- Bake, uncovered, at 350 degrees for 30-40 minutes or 160 for fan oven.
