  • Place a rack in middle of oven; preheat to 275°. Line a rimmed baking sheet with aluminum foil; lightly grease with extra-virgin olive oil. Place four 6–8-oz. skin-on salmon fillets, skin side down, on prepared baking sheet.
  • Mix zest of 1 lemon, 1 Tbsp. finely chopped thyme, and 1 Tbsp. extra-virgin olive oil in a small bowl. Spread mixture over salmon fillets. Season with kosher salt and freshly ground pepper. Let sit at room temperature 10 minutes to allow flavors to meld.
  • Bake salmon until just opaque in the center, 15–18 minutes. Serve with lemon wedges for squeezing over.
