Ingredients
- For the muffin dough
- 2 eggs, beaten
- 3 very ripe bananas, mashed
- 2 cups all-purpose flour
- 1 teaspoon salt
- 3/4 cup white sugar
- 1 teaspoon baking soda
- For the crunchy topping
- 1/2 cup white sugar
- 1/3 cup all-purpose flour
- 1/2 cup butter, cubed
Instructions
- Preheat oven to 175C.
- Lightly grease or line 10 muffin cups.
- In a medium bowl, combine eggs and bananas.
- In a separate bowl, mix together flour, salt, sugar and baking soda. Stir banana mixture into flour mixture.
- Fold in walnuts if desired. Pour batter into prepared muffin cups.
- In a small bowl, stir together 1/2 cup sugar, 1/3 cup flour, butter and 1 1/2 teaspoons cinnamon. Mix together with fork and sprinkle over unbaked muffins.
- Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into center of a muffin comes out clean.
