Ingredients

  • 250g wholewheat flour
  • 75g raisins
  • 75g dried cranberries
  • 250ml cold tea
  • 50ml orange juice
  • Zest of one orange
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1 egg

Instructions

  • Place the raisins and cranberries in a bowl and pour in the tea. The tea (Barry's of course) can be hot or cold. Leave to cool, cover in clingfilm and soak overnight.
  • Preheat the oven to 180C/160C fan/gas 4. Grease a small loaf tin with low-fat spread.
  • Sieve the flour, baking powder and baking soda. Add the orange zest, the egg and mix in the fruit with the tea. Add the orange juice, the mixture should be quite sloppy.
  • Stir together to mix. Spoon into the tin and smooth over. Bake for an hour or until a skewer comes out clean when inserted in the centre.
  • Put on the kettle and relax with your tasty brack and lashings of butter.
