Courgette Puff Pie
This recipe combines tender roasted courgettes with a rich and cheesy filling, all wrapped up in a flaky and golden pastry crust. Ingredients
- 450g courgette
- 3tbsp olive oil
- 375g pack puff pastry ready rolled
- 2 medium eggs
- 2tbsp creme fraiche
- 75g gruyere, grated
- 2 garlic cloves, crushed
- 4tbsp chopped parsley
- 50g bread crumbs
Instructions
- Preheat oven to 180oC.
- Place courgettes on baking sheet, drizzle with oil and roast for 8mins
- Transfer courgettes to sheet of grease proof paper and set aside unwashed tray
- Roll out pastry to 30.5cm2 and place on baking sheet
- Whisk 1 egg with the creme fraiche. Add 50g cheese and garlic and parsley. Season.
- Arrange courgettes on middle of the pastry. Pour egg mix over the top. Scatter crumbs and remaining cheese over top. Gather up the sides to create a rim. Chill 10mins. Brush pastry with other egg and bake for 30mins
