Ingredients

  • Chicken Stock
  • Ingredients:
  • 1 whole 3-4 lb chicken cut up
  • 1 large yellow or white onion roughly chopped
  • 1 large celery stalk roughly chopped
  • 2 medium carrots roughly chopped
  • 1 large or two small bay leaves
  • 1 sprig fresh thyme or rosemary (not chopped)
  • Salt and pepper to taste
  • Enough water to cover ingredients by about 1-2 inches
  • Chicken Soup
  • Ingredients:
  • Chicken stock (see above recipe)
  • 1 Tbsp olive oil
  • 1 large stalk of celery chopped
  • 2 carrots chopped
  • 1 large or 2 medium leeks cleaned and sliced thinly (you can substitute in onion)
  • Any other vegetables that sound comforting
  • Salt and pepper to taste
  • 2 cups of your favorite rice or small pasta

Instructions

  • Heat olive oil in a saucepan, add onion, garlic, chicken and leeks, and sauté gently for 8 minutes without browning.
  • Add the potatoes, stock, thyme and bay leaves, and simmer for 20 minutes.
  • Add sweetcorn kernels and cook for a further 10 minutes. Remove thyme and bay leaves before serving. Season to taste with freshly ground black pepper.
