Ingredients
- 2 Tbs. vegetable oil
- 1 small yellow onion, sliced
- 2 garlic cloves, sliced
- 1 lb. shrimp, peeled and deveined
- 1 cup clay pot cooking sauce
- Chopped fresh cilantro for garnish
- Steamed rice for serving
Instructions
- In a flameproof clay pot or saucepan over medium heat, warm the oil. Add the onion and garlic and sauté, stirring occasionally, until fragrant and translucent, 3 to 4 minutes.
- Add the shrimp and cook, stirring, just until pink, about 1 minute. Add the clay pot cooking sauce, bring to a simmer and cook just until the shrimp are opaque, 2 to 3 minutes.
- Garnish with cilantro and serve directly from the clay pot. Accompany with steamed rice. Serves 2 to 4.
