Ingredients

  • For the turkey & sauce:
  • 250g diced turkey
  • 1 tbsp extra virgin olive oil
  • 2 cloves of garlic
  • 1/2 large onion
  • 2 tsp cinnamon
  • 1 tsp dried coriander
  • 2 tbsp fresh coriander
  • 50g button mushrooms
  • 300ml chicken stock
  • 200ml tinned tomatoes
  • 100g chickpeas
  • handful of flaked almonds
  • For the mash:
  • 1 large white fleshed sweet potato
  • 50ml skimmed milk
  • 1/2 large onion
  • 2 tsp dried parsley

Instructions

  • Heat oil in the pan. Chop garlic and onion and fry with turkey and spices for 10 minutes.
  • Add mushrooms, tinned tomatoes, chicken stock and chickpeas to the pan and simmer for 15 minutes
  • Meanwhile, peel and chop sweet potato and place in saucepan with boiling water. Add onions.
  • Cook on medium-heat for 10 minutes. Drain water from pan, add milk and parsley and mash
  • Serve mash and turkey. Garnish with flaked almonds
