Cinnamon Turkey & Parsley Mash

Ingredients
- For the turkey & sauce:
- 250g diced turkey
- 1 tbsp extra virgin olive oil
- 2 cloves of garlic
- 1/2 large onion
- 2 tsp cinnamon
- 1 tsp dried coriander
- 2 tbsp fresh coriander
- 50g button mushrooms
- 300ml chicken stock
- 200ml tinned tomatoes
- 100g chickpeas
- handful of flaked almonds
- For the mash:
- 1 large white fleshed sweet potato
- 50ml skimmed milk
- 1/2 large onion
- 2 tsp dried parsley
Instructions
- Heat oil in the pan. Chop garlic and onion and fry with turkey and spices for 10 minutes.
- Add mushrooms, tinned tomatoes, chicken stock and chickpeas to the pan and simmer for 15 minutes
- Meanwhile, peel and chop sweet potato and place in saucepan with boiling water. Add onions.
- Cook on medium-heat for 10 minutes. Drain water from pan, add milk and parsley and mash
- Serve mash and turkey. Garnish with flaked almonds
