Ingredients
- 1 cup cherry tomatoes, sliced in half
- 1 pear, chopped
- 1/2 cup kumquats, seeded and sliced (or used candied orange peel)
- 1 avocado, chopped
- 2 green onions, chopped
- 1/2 cup candied mixed nuts
- a few handfuls of greens (optional)
- juice of 1 lemon
- 1/4 cup grape-seed oil
- 1 teaspoon grated ginger
- 1 teaspoon lemongrass
- 1 cup mixed nuts
- 1 tablespoon water
- 3 tablespoons sugar
- dash of salt
- dash of cinnamon
- dash of cayenne or red pepper spice
Instructions
- for candied nuts
- Combine water, nuts, and sugar in a pan over medium high heat. Stir using a wooden spoon until the sugar crystalizes (about 5 minutes). Add in salt, cinnamon and spice. Lay out on parchment paper to cool.

- Chop everything. Whisk together dressing. Toss everything in the dressing and serve!
