Ingredients

  • 1 cup cherry tomatoes, sliced in half
  • 1 pear, chopped
  • 1/2 cup kumquats, seeded and sliced (or used candied orange peel)
  • 1 avocado, chopped
  • 2 green onions, chopped
  • 1/2 cup candied mixed nuts
  • a few handfuls of greens (optional)
  • juice of 1 lemon
  • 1/4 cup grape-seed oil
  • 1 teaspoon grated ginger
  • 1 teaspoon lemongrass
  • 1 cup mixed nuts
  • 1 tablespoon water
  • 3 tablespoons sugar
  • dash of salt
  • dash of cinnamon
  • dash of cayenne or red pepper spice

Instructions

  • for candied nuts
  • Combine water, nuts, and sugar in a pan over medium high heat. Stir using a wooden spoon until the sugar crystalizes (about 5 minutes). Add in salt, cinnamon and spice. Lay out on parchment paper to cool.

  • Chop everything. Whisk together dressing. Toss everything in the dressing and serve!
