Chocolate Fudge Brownie

Ingredients
- 4oz butter
- 6oz plain dark choc, roughly chopped or broken
- 8oz caster sugar
- 2 tsp vanilla essence
- 2 med. eggs lightly beaten
- 5oz plain flour
- 6oz icing sugar
- 2 tsp cocoa powder
- 1/2 oz butter.
Instructions
- Preheat Oven - 180 degrees
- Line 8 inch cake tin with greaseproof or baking paper
- Slowly melt butter - (4oz) & choc together in heat proof bowl in microwave
- Put mixture in large bowl, stirring in the sugar & vanilla essence
- Stir in the eggs, and sift over flour, folding together well with a metal spoon and rubber spatula
- Pour into prepared tin and transfer to oven, baking for 30 mins or until just set
- Remove from oven, leaving to cool in tin before turning out onto wire rack
- Sift icing sugar and cocoa powder into small bowl, making a well in centre
- Place butter in well, gradually adding abt 2 tsp of hot water, mixing to form smooth, spreadable icing
- Pour icing over cooked mixture and allow to set for cutting into squares. Serve cold
