Ingredients

  • 250g (8oz) plain flour
  • 1 tsp baking powder
  • 125g (4oz) butter, plus extra for greasing
  • 175g (6oz) caster sugar
  • 1 egg, beaten
  • 1 tsp vanilla essence

Instructions

  • Lightly butter several baking tray. Sift the flour and baking powder into a bowl. Rub in the butter with your fingertips until the mixture resembles beadcrumbs.
  • Mix in the sugar and chocolate chips. Add the beaten egg and vanilla essence, and stir to form a smooth dough.
  • Shape the dough into a long cylinder and cut the cylinder into thin slices and place the biscuits on the baking trays. Bake in a preheated oven at 190oc (375oF, gas 5) for 10-12 minutes until golden.
