This hearty and flavorful sausage chilli is a comforting dish that is perfect for a cozy dinner at home. The sausages are cooked with onions and a blend of spices before simmering in a rich tomato sauce with mushrooms and kidney beans. Finished with a swirl of sour cream and a sprinkle of fresh spring onions, this dish is delightful when served over creamy mashed potatoes.

Ingredients

  • 15ml vegetable oil
  • 8 sausages
  • 1 large onion, sliced
  • 1 tbsp chilli seasoning (mild or hot to taste)
  • 500g passata
  • 200g chopped tomatoes
  • 15ml Worcester sauce
  • 1 tbsp wholegrain mustard
  • 100g button mushrooms
  • 400g kidney beans
  • Small carton sour cream
  • 2 spring onions, chopped

Instructions

  • Heat the oil in a large saucepan, add sausages and onions, fry gently until sausages are browned
  • Add chilli seasoning, passata, tomatoes and mushrooms; simmer for a further 15 minutes to reduce and thicken
  • Stir in beans and cook gently for a further 5 minutes
  • Take off the heat, swirl in sour cream and sprinkle with chopped spring onions. Serve with mashed potatoes
