Chilli Sausage Casserole
This hearty and flavorful sausage chilli is a comforting dish that is perfect for a cozy dinner at home. The sausages are cooked with onions and a blend of spices before simmering in a rich tomato sauce with mushrooms and kidney beans. Ingredients
- 15ml vegetable oil
- 8 sausages
- 1 large onion, sliced
- 1 tbsp chilli seasoning (mild or hot to taste)
- 500g passata
- 200g chopped tomatoes
- 15ml Worcester sauce
- 1 tbsp wholegrain mustard
- 100g button mushrooms
- 400g kidney beans
- Small carton sour cream
- 2 spring onions, chopped
Instructions
- Heat the oil in a large saucepan, add sausages and onions, fry gently until sausages are browned
- Add chilli seasoning, passata, tomatoes and mushrooms; simmer for a further 15 minutes to reduce and thicken
- Stir in beans and cook gently for a further 5 minutes
- Take off the heat, swirl in sour cream and sprinkle with chopped spring onions. Serve with mashed potatoes
