Chilli Pork & Apple

Ingredients
- For The Pork & Apple
- 2 Pork Loin Stakes
- 1 Large Eating Apple
- 1/2 - 1 Chilli
- 1/2 Can Coconut Milk
- 1 tsp Mixed Spices
- Dash Pepper
- For the Mashed Potato
- 4 Potatoes (Best with good all-rounders)
- 6 tbsp Milk
- 4 tbsp Butter
- Dash Pepper
Instructions
- Prepare potatoes (I prefer to leave the skin on, but the choice is yours) and put onto boil
- Slice Apple & Chilli and add to an oiled pan
- Add pepper & mixed spice and Fry for 5-10 minutes until soft
- Add Pork and cook thoroughly (5-10 minutes) Turning occasionally
- Add coconut milk and cook for a further 10 minutes
- Drain potatoes and add butter & coconut milk then mash until smooth
- Plate up and add mixed vegetables if desired
