Ingredients

  • For The Pork & Apple
  • 2 Pork Loin Stakes
  • 1 Large Eating Apple
  • 1/2 - 1 Chilli
  • 1/2 Can Coconut Milk
  • 1 tsp Mixed Spices
  • Dash Pepper
  • For the Mashed Potato
  • 4 Potatoes (Best with good all-rounders)
  • 6 tbsp Milk
  • 4 tbsp Butter
  • Dash Pepper

Instructions

  • Prepare potatoes (I prefer to leave the skin on, but the choice is yours) and put onto boil
  • Slice Apple & Chilli and add to an oiled pan
  • Add pepper & mixed spice and Fry for 5-10 minutes until soft
  • Add Pork and cook thoroughly (5-10 minutes) Turning occasionally
  • Add coconut milk and cook for a further 10 minutes
  • Drain potatoes and add butter & coconut milk then mash until smooth
  • Plate up and add mixed vegetables if desired
