Ingredients

  • 1 clove garlic, crushed
  • 2 tsp paprika
  • 2 tsp chilli powder
  • 2 tsp ground cumin
  • 1 pink saffron (soaked in cold water)
  • 50 m olive oil
  • 1 lemon, zest and juice
  • salt and pepper

Instructions

  • Mix garlic, paprika, chilli powder and ground cumin in a bowl
  • drain the saffron and add to the bowl
  • whisk in the olive oil, salt and pepper and the lemon zest and juice to form a smooth paste
