Ingredients

  • 300g fusilli pasta
  • 1 onion, finely chopped
  • 1 clove of garlic, finely chopped
  • 2 tbsp chopped leek
  • 1 carrot, finely chopped
  • 1 tbsp olive oil
  • 2x400g cans chopped tomatoes
  • 1 bay leaf
  • 80g mild cheddar cheese, grated

Instructions

  • Cook pasta
  • Meanwhile fry onion, garlic, leek and carrot in oil for a few minutes
  • Add tomatoes and bay leaf and cook for 10 minutes
  • Drain the pasta, serve topped with sauce and sprinkled with cheese
