Ingredients
- 300g fusilli pasta
- 1 onion, finely chopped
- 1 clove of garlic, finely chopped
- 2 tbsp chopped leek
- 1 carrot, finely chopped
- 1 tbsp olive oil
- 2x400g cans chopped tomatoes
- 1 bay leaf
- 80g mild cheddar cheese, grated
Instructions
- Cook pasta
- Meanwhile fry onion, garlic, leek and carrot in oil for a few minutes
- Add tomatoes and bay leaf and cook for 10 minutes
- Drain the pasta, serve topped with sauce and sprinkled with cheese
