Cauliflower And Coconut Curry

Ingredients
- 1 fresh cauliflower
- 1 handful green beans
- 1 small onion
- 200ml coconut cream
- small knob ginger
- juice of 1 lime
- 1 tbsp brown sugar
- 1 tbsp cajun
- " coriander
- 1 tsp caraway
- " chilli
- salt, pepper
- serve with brown rice
Instructions
- Chop the cauliflower and steam the florets. Chop the green beans into short pieces. Start boiling the brown rice.
- Fry the onion with the spices, lime juice, ginger and sugar until the mixture is like chutney.
- Add the coconut cream and bring to the boil.
- Add the cauliflower and green beans and simmer for 5 mins.
- Serve with the brown rice.
