Cauliflower Cheese

Ingredients
- 25g Butter
- 25g Plain flour
- 250ml Milk
- Nutmeg
- Salt and pepper
- 75g Grated strong cheddar cheese
- 1 Small tin of sweetcorn
- 6 Florets of Cauliflower
- 6 Florets of Broccoli
- 100g Macaroni
- Equipment
- 3x Saucepans
- Sharp knife
- Whisk
- Wooden spoon
- Grater
- Sieve / Collander
Instructions
- Bring a pan of water to the boil and add macaroni. Bring back to the boil and simmer for 10 minutes. When cooked place in a colander to drain
- Then bring another saucepan of water to the boil. Add cauliflower, bring back to the boil for 3 minutes. Add Broccoli, return to the boil and simmer for 4 minutes
- Meanwhile put Butter, Flour, Milk, Salt, Pepper and grated nutmeg into a non-stick saucepan. Put on a medium heat and whisk continuously until heated and thickened. Stir in grated cheese and drained tin of sweetcorn. Cook over a low heat until cheese melted, sweetcorn heated and sauce cooked.
- Drain vegetables, put in a serving bowl and stir in sauce.
- Sprinkle with grated cheese and put under the grill until cheese is bubbling.
