Carrot And Coriander Soup

Ingredients
- 1 medium potato
- 2 carrots
- 1 onion
- 250ml water
- stock cube - vegetable
- 25g margarine or 1 tbsp oil
- mixed herbs (bouquet garni)
- salt and peper
- 1 leaf of corriander
Instructions
- Prepare the vegetables so that they are in good size chunks which aren't too big
- Pour water into a jug and add stock cube. Stir well
- Melt the fat in a saucepan over a low-medium heat
- Add diced vegetables to pan and stir with a wooden spoon for 2 minutes
- Add salt, pepper, mixed herbs and corriander to the pan.
- Stir in stock and bring to a boil. When it is brought to a boil, simmer for 15 minutes or until the vegetables are soft
- Blend if you wish to make the right texture and consistency that you wish
