Carrot Cake

Ingredients
- 200g butter, melted
- 100g caster sugar
- 125g brown sugar
- 150g grated carrots (About 3 large)
- 75 chopped walnuts
- 1 tbsp raisins
- 1/2 tsp honey
- 1 tbsp milk
- 1/2 cinnamon
- 1 tbsp greek yogurt
- 3 large eggs
- 1/2 tsp vanilla extract
- 250g self-raising flour
- FOR FROSTING
- 250g soft cheese
- 100g icing sugar
- 1/2 tsp vanilla extract
Instructions
- Preheat the oven to gas mark 5/180C. Grease a square or round baking tin with a little oil.
- Mix all of the ingredients together apart from the flour, using an electric mixer, then fold in the flour using a spatula or wooden spoon.
- Pour into the prepared tin and bake for 45-65 minutes or until a skewer inserted comes out clean
- While cooling, beat all of the frosting ingredients together and smooth over cake when completely cool.
