Caramelised Plum Pots

Ingredients
- 1kg Ripe Plums
- 500ml Greek Yoghurt with Honey (Asda do a good one)
- 1 Lyons Golden Syrup Loaf Cake
- 100g Unsalted Butter
- 150g Soft Brown Sugar
Instructions
- Halve and stone the plums and put them cut side up in a roasting tin
- Cut the butter into small pieces and dob randomly over the plums
- Sprinkle over the sugar and put in hot oven (200'c) for 20-25 mins or until cooked and caramelised with lots of lovely dark juices (leave to cool at this stage if desired)
- slice your cake into 10 slices and put each slice up the side of a ramekin or individual serving dish/glass
- Top with a spoonfull of cooked plums and some juices
- Finish with a spoonfull of the yoghurt - you can leave these for several hours at room temperature, they actually improve as the cake soaks up the caramelised juices. Enjoy!
