Cajun Chicken And Mango Salad

Ingredients
- For the Chicken
- 4 chicken breasts sliced
- 2tbsp sour cream
- 1tbsp cajun spice mix
- For the salad
- 1 skinned chopped mango
- 1 bag fresh baby leaf salad
- 10g fresh chopped coriander
- 2 spring onions sliced
- 1 red onion sliced
- 1tsp lime juice
Instructions
- mix sliced chicken sour cream and cajun spices and grill on relatively high heat for 15 mins turning occasionally.
- Whilst the chicken grills chop onions and wash salad. Chop mango and coriander and mix salad together with a little lime juice.
- Once Chicken is grilled slice and mix in with salad for a warm chicken salad with a spicy kick.
