Ingredients

  • 1 Butterut Squash
  • 1 white sweet potato
  • 6 shallots
  • 1 inch piece of ginger (grated
  • 1.5 litres of water
  • 3 tbsp liquid vegetable stock
  • double cream to garnish

Instructions

  • To Make Stock
  • Add 3tbsp liquid vegetable stock to 1.5 l of water and bring to the boil the reduce heat to simmer
  • To Prep Veg
  • peel and dice sweet potato
  • peel de-seed and dice squash
  • peel and chop shallots
  • grate gigner
  • add potato squash shallots and ginger to stock
  • simmer for 45 minutes or until squash and potato are soft
  • blend to a smooth velvety consistency
  • Serve in a bowl and add a good swirl of Double cream to decorate
