Ingredients
- 1 Butterut Squash
- 1 white sweet potato
- 6 shallots
- 1 inch piece of ginger (grated
- 1.5 litres of water
- 3 tbsp liquid vegetable stock
- double cream to garnish
Instructions
- To Make Stock
- Add 3tbsp liquid vegetable stock to 1.5 l of water and bring to the boil the reduce heat to simmer
- To Prep Veg
- peel and dice sweet potato
- peel de-seed and dice squash
- peel and chop shallots
- grate gigner
- add potato squash shallots and ginger to stock
- simmer for 45 minutes or until squash and potato are soft
- blend to a smooth velvety consistency
- Serve in a bowl and add a good swirl of Double cream to decorate
