Ingredients

  • 1 Large Butternut Squash
  • 1 Large Onion
  • 3 Medium Potatoes
  • 3 Medium Carrots
  • 500ml Pint Chicken Stock
  • Pinch of salt and pepper
  • 2 tbsp of mixed herbs

Instructions

  • Cut, peel and de-seed the butternut squash and cut it into medium sized cubes. Peel and cut up carrots, onions and potatoes into relitavely small pieces and throw them all together in a large saucepan.
  • Add the chicken stock, herbs, salt and pepper.
  • Bring to the boil, after it has started to boil put a lid on the saucepan and let it to simmer on a low heat until the vegetables are soft.
  • Once the vegetables are soft you can use a hand blender to make it smooth, if the soup is to thick then add hot water and carry on mixing it until you are satisfied with the thickness.
