Butternut Squash Soup

Ingredients
- 1 Large Butternut Squash
- 1 Large Onion
- 3 Medium Potatoes
- 3 Medium Carrots
- 500ml Pint Chicken Stock
- Pinch of salt and pepper
- 2 tbsp of mixed herbs
Instructions
- Cut, peel and de-seed the butternut squash and cut it into medium sized cubes. Peel and cut up carrots, onions and potatoes into relitavely small pieces and throw them all together in a large saucepan.
- Add the chicken stock, herbs, salt and pepper.
- Bring to the boil, after it has started to boil put a lid on the saucepan and let it to simmer on a low heat until the vegetables are soft.
- Once the vegetables are soft you can use a hand blender to make it smooth, if the soup is to thick then add hot water and carry on mixing it until you are satisfied with the thickness.
