Burgers Stuffed With Pimento Cheese

Ingredients
- 4 oz. sharp cheddar cheese, grated
- 2 oz. diced pimento peppers, rinsed and drained well
- 1/4 cup mayonnaise
- Kosher salt and freshly ground pepper, to taste
- 1 1/2 lb. ground beef
- 4 hamburger buns
- 2 Tbs. unsalted butter, melted
- Lettuce, sliced tomato, sliced pickles and sliced red onion for

Instructions
- Prepare a medium-hot fire in a grill.
- In a bowl, stir together the cheese, pimentos and mayonnaise. Season with salt and pepper. Set aside.
- Divide the ground beef into eight 3-oz. portions and shape each into a ball. Using a stuffed hamburger press according to the manufacturer’s instructions, make 4 burgers, stuffing each with 2 Tbs. of the pimento cheese. Season the burgers with salt and pepper. Brush the cut sides of the buns with the melted butter. 
- Grill the burgers, turning once, about 4 minutes per side. Toast the buns, cut side down, on the grill for 1 to 2 minutes. Place the burgers on the buns and serve with lettuce, tomato, pickles and onion. Serves 4.
