Breakfast Pasta
This recipe combines the savory flavors of pork sausages and bacon with the freshness of tomatoes and mushrooms, all mixed together with wholemeal fusilli pasta. Ingredients
- 2 Pork sausages, cut into chunks
- 6 streaky bacon rashers, quartered
- 1 onion, sliced
- 6 medium tomatoes, quartered
- 2 eggs
- 50g garlic and herb philadelphia
- 50g half fat cheddar, grated
- 100g button or chestnut mushrooms, quartered
- 100g wholemeal fusilli
Instructions
- Boil the fusilli as per the packet instructions
- Fry the onion, sausage and bacon for 5 minutes
- add the mushroom quarters and fry for a further 5 minutes
- add the tomatoes and continue to fry for a further 10 minutes
- Beat the eggs and philladelphia until smooth
- Drain the pasta
- Add the pasta to the meat and vegetable sauce and stir through
- Add the egg mixture to the dish and stir through
- Finally add the cheddar and serve with a green salad and or garlic bread
