Ingredients

  • 12 scallops
  • 1 cauliflower head
  • 6 tablespoons of broad beans
  • mousse for cauliflower

Instructions

  • clean and dry 16 scallops and sprinkle very fine breadcrums over them
  • boil beans and cauliflower for 5 minutes.
  • mash cauliflower and add mousse.
  • panfry scallops for 1 minutes each side and serve on top of mousse and scattered beans
