Ingredients
- 12 scallops
- 1 cauliflower head
- 6 tablespoons of broad beans
- mousse for cauliflower
Instructions
- clean and dry 16 scallops and sprinkle very fine breadcrums over them
- boil beans and cauliflower for 5 minutes.
- mash cauliflower and add mousse.
- panfry scallops for 1 minutes each side and serve on top of mousse and scattered beans
