Ingredients

  • 1 medium onion, peeled
  • 5 whole cloves
  • 3/4 pint milk
  • 1 bay leaf (optional)
  • 6 black pepper corns
  • 1 tablespoon butter
  • 75g fresh white breadcrumbs
  • salt & pepper

Instructions

  • Stud the onion with the cloves. Put into a saucepan with the milk, bay leave (if used) and peppercorns. Bring to boil, remove from heat and leave in cool place to infuse for 20 minutes.
  • Remove the peppercorns and bay leaf and add the butter and breadcrumbs. Bring slowly to boil, stirring continuously, and cook very gently for about 10 minutes until creamy, stirring from time to time.
  • Discard the onion and season to taste. Serve hot with chicken or turkey
