Beef Stroganoff

Ingredients
- 675g thinly sliced rump steak or fillet steak
- 3 tbsp plain flour
- salt and pepper
- 50g butter
- 225g onions thinly sliced
- 225g mushrooms thinly sliced
- 250ml soured cream
Instructions
- Beat the steak slices with a rolling pin, then cut them into thin strips. Put the flour into a shallow bowl, season with plenty of salt and pepper and coat the beef strips
- Melt half the butter in a large heavy bottomed saucepan, add the onion slices and fry for about 10 minutes until golden.Stir in the mushrooms and continue cooking for a further 2-3 minutes, using a slotted spoon, transfer the vegetables to a dish and set aside
- melt the remaining butter in the pan, add the meat and fry rapidly for 2-3 minutes, turning frequently, return the vegetables to the pan and heat through for 1 minute
- pour in soured cream, stir once or twice, and heat for 1-2 minutes until all the ingrediants are heated through
- serve with new potatoes or rice and some lovely crusty homemade bread
