Ingredients

  • 1 chopped onion
  • 2 garlic cloves (or more, for your individual preference)
  • 8tbsp risotto rice
  • 4 tbsp red kidney beans
  • 4 tbsp haricot beans
  • Enough veg stock to cover all
  • 4 tbsp parmesan

Instructions

  • Fry onion and garlic in a little oil until soft
  • Add risotto rice and beans, plus veg stock
  • Bring to the boil, then reduce heat and simmer until rice is cooked
  • Add more stock if needed
